  • 4 cups fresh kale, stems removed and chopped
  • 1 cup quinoa, uncooked, rinsed
  • 1 large carrot, julienned or grated
  • 1 cucumber, diced
  • 1 red bell pepper, thinly sliced
  • 1 avocado, sliced
  • 1/4 red cabbage, thinly sliced
  • 2 tbsp pumpkin or sunflower seeds
  • Fresh cilantro or parsley, chopped

For the lemon tahini dressing:

  • 3 tbsp tahini, well-stirred
  • Juice of 2 lemons (about 1/4 cup)
  • 2 tbsp extra virgin olive oil
  • 1 garlic clove, minced
  • 1 tsp maple syrup
  • 1/2 tsp ground cumin
  • Salt and pepper, to taste
  • 2-3 tbsp water, to thin

For the roasted chickpeas:

  • 1 tbsp olive oil
  • 1/2 tsp paprika (smoked, if available)
  • 1/2 tsp ground cumin
  • 1/4 tsp garlic powder
  • Salt and pepper, to taste

Instructions

1. Cook the quinoa Rinse quinoa under cool water until it runs clear — this removes its natural bitter coating (saponin). Combine with 2 cups water in a saucepan, bring to a boil, then reduce heat, cover, and simmer 15 minutes. Let stand covered for 5 minutes, then fluff with a fork.

2. Roast the chickpeas Preheat oven to 400°F (200°C). Pat chickpeas completely dry. Toss with olive oil, paprika, cumin, garlic powder, salt, and pepper. Spread on a parchment-lined baking sheet and roast 20-25 minutes, shaking halfway through, until golden and crisp.

3. Massage the kale Place chopped kale in a bowl with a drizzle of olive oil and a pinch of salt. Massage with your hands for 1-2 minutes until the leaves soften and darken — this breaks down the tough fibrous structure, making raw kale easier to eat.

4. Make the dressing Whisk together tahini, lemon juice, olive oil, garlic, maple syrup, and cumin. The mixture may thicken at first — add water gradually, whisking, until smooth and pourable. Season with salt and pepper.

5. Assemble Divide quinoa between bowls. Arrange kale, roasted chickpeas, carrot, cucumber, bell pepper, and red cabbage around it. Top with avocado, seeds, and a drizzle of dressing. Garnish with fresh herbs.
